Texas is home and Colorado is our second market — Colorado gets a genuinely different trailer, not the same one with a longer tow. We tow regularly into Oklahoma, New Mexico, Louisiana and Arkansas, and we've delivered as far as Georgia, South Carolina and Utah.

Colorado

Colorado is not a longer version of the same job. Different licensing, a statutory fee schedule, a statewide fire-inspection checklist, and two physical realities Texas doesn't have: every square foot of the state sits above the altitude threshold where gas appliance orifices have to change, and the water in an uninsulated trailer freezes.

OklahomaAn OSDH food establishment licence has been recognised statewide since 1 November 2025, with local authorities limited to administrative-cost fees. The State Fire Marshal runs a centralised inspection and decal programme for units with cooking appliances that produce smoke or grease-laden vapours — not for every food truck.
New MexicoRegulated by the NM Environment Department, except Bernalillo County and Albuquerque, which run their own programmes. The NM rules require food equipment to be certified or classified for sanitation by an ANSI-accredited programme — standard Food Code language, but enforced explicitly, so equipment documentation matters.
LouisianaStatewide through the Louisiana Department of Health's Retail Food Program, with a separate Mobile Food Establishment Plan Review Questionnaire. New Orleans layers significant additional local rules on top.
ArkansasArkansas Department of Health, statewide, with a genuine plan-review submittal — ceiling, wall and floor schedules, door and window specs, equipment schedules. Plan review is 1% of estimated cost (minimum $50, maximum $500) plus a $35 annual permit.
