What goes into a birria trailer

Heavy-duty burner rangeConsomé pots are heavy and they sit for hours. The range and the counter under it get built for that load.

What we've learned building these

Wastewater is the thing people underestimate. A birria program generates more liquid waste per cover than almost anything else. Texas requires the waste tank to be 15% larger than fresh; for birria we build well above the minimum so you're not dumping mid-shift on a Saturday.

Ventilation over the consomé, not just the plancha. Standing pots throw steam continuously. If the hood only covers the cooking surface, that moisture ends up on your ceiling and in your electrical.

Grease everywhere. Birria coats surfaces in a way dry cooking doesn't. Every junction coved and sealed, every surface genuinely wipeable, and floor drainage that works — otherwise your end-of-night clean takes an hour longer, forever.

Weight distribution. Full consomé pots plus a heavy range concentrate weight in one area. We position it over the axles rather than wherever the layout happened to put it.

Birria trailers — questions

Is a birria trailer different from a taco trailer?

Meaningfully, yes — heavier equipment, more ventilation, more wastewater capacity, and different surface and drainage detailing. You can run birria out of a taco trailer, but you'll be fighting it. If birria is the main program, tell us up front.

Can I run both birria and regular tacos?

Most of our birria customers do. The layout handles both — it just needs to be designed for the harder of the two, which is birria.

Does the extra ventilation cost a lot more?

It's a real line item but a small one against the build, and it's much cheaper than retrofitting a larger hood into a finished trailer — which means pulling the suppression system and re-certifying it.
