What changes when you build a food trailer for Colorado

Five things, two of which are required by code and two of which aren't — and we'll tell you which is which. Plus what altitude genuinely doesn't change, despite the marketing.

Altitude and gas orifices — the one nobody does

Commercial gas appliances ship from the factory configured for installation below 2,000 feet. This isn't obscure — it's printed in the manual. One commercial fryer manual puts it plainly: the unit ships configured for altitudes lower than 2,000 feet, and if installed above that "the orifices will need changed. Failure to install proper orifice size will void warranty." Manufacturers sell dedicated high-elevation orifice part numbers for exactly this.

Now consider Colorado. Denver is 5,280 ft. Colorado Springs is around 6,035 ft. Pueblo, the lowest of the major markets, is around 4,700 ft. Leadville is 10,152 ft. The lowest point in the entire state is above the 2,000-foot threshold. There is nowhere in Colorado where factory orifices are the correct part.

What we do: order elevation-specific orifice kits for every gas appliance on a Colorado build, install them, and hand you the documentation. A Texas build essentially never does this, because in Texas it never matters.

The LP-gas alarm — the item that fails out-of-state builds

IFC §319.8.5 requires that a listed LP-gas alarm shall be installed within the vehicle in the vicinity of the LP-gas system components, according to the manufacturer's instructions. It appears on the statewide Fire Marshals Association of Colorado inspection checklist, which since HB25-1295 is the vehicle for reciprocal fire permits across Colorado jurisdictions.

It costs very little. It is a pass/fail line. And it is, as far as we can tell, the single most common reason a trailer built outside Colorado fails its first Colorado fire inspection.

Every Colorado unit we build has one fitted as standard, along with the rest of the propane package: 200 lb aggregate maximum (§319.8.1), cylinders securely mounted and restrained (§319.8.2), piping and valves protected against tampering, impact and vibration (§319.8.4), stored upright with the valve end up, relief devices discharging upward and unobstructed, and vent piping designed to prevent moisture collection and freezing — which is the one place the fire code itself acknowledges cold weather.

Freeze protection — no code requires it, and you still need it

We want to be straight about this, because it would be easy to imply otherwise.

There is no freeze-protection requirement in Colorado. Not in 6 CCR 1010-2. Not in the FDA Food Code. Not in IFC 319 or on the FMAC checklist. Not in any county plan review packet we read. No inspector will ever check it.

What will check it is November. A Texas-spec trailer runs PEX through an uninsulated belly, which is completely fine in San Antonio and is a split line and a month off the road in Denver. Repairing burst plumbing inside finished walls costs several times what protecting it would have.

Our Colorado freeze package:

  • Insulated and actively heated tank compartment
  • Heat-taped and insulated supply and waste lines
  • Underbody skirting
  • Labelled drain-down and blow-out ports, so winterising is a ten-minute job rather than a guess
  • Water heater and pump located where they stay above freezing rather than wherever there was room

No Colorado builder we found publishes a freeze package. It's the most obviously useful thing you can add to a trailer that will spend winters above 5,000 feet.

Water sizing — Colorado does the arithmetic differently

Texas sets no minimum tank size and leaves you with the 15% ratio between fresh and waste. Colorado's local agencies publish actual sizing tests, and they bite.

Denver's fresh tank standard is the greater of two figures: minimum 10 gallons, or 3 gallons per hour of operationand the tank must be large enough to fill the three-compartment sink at least once every four hours. A twelve-hour service day means at least 36 gallons on the hourly test alone, before you check the sink-fill test. Mesa County uses a similar structure and adds 3 gallons per handwash sink per hour.

The waste tank then has to be 15% larger than whatever that comes to (Food Code §5-401.11(A)). It's easy to under-size a Colorado trailer by building to a Texas habit.

Denver also specifies the handwash basin itself: minimum 10 in × 10 in, hands-free, continuous flow under pressure, minimum 1 GPM, 100–120°F through a combination faucet or mixing valve.

Brakes and awnings — the mountain and the wind

Colorado has the most heavily used runaway truck ramp in the United States, on westbound I-70. Texas has nothing comparable, which is why Texas builders routinely under-spec trailer brakes — in Texas the spec is never tested.

A loaded trailer descending from the Eisenhower Tunnel, or eastbound into Georgetown, needs a properly rated and correctly adjusted electric or hydraulic brake system and low-gear discipline. We spec Colorado trailer brakes for sustained mountain descent.

On wind: Larimer County's published structural design criteria use design wind speeds from 115 mph upward, and ground snow loads rising from 55 psf at 5,000 ft to 160 psf at 9,000 ft. Those figures govern buildings, not trailers, and we're not going to pretend they apply to your awning. But they describe the environment honestly, and they're the reason we build Colorado units with stowable awnings clearly labelled to be retracted in wind, and roofs that shed rather than pond and freeze. A fixed Texas-style canopy on the Front Range is a liability.

What altitude does not change

There's a fair amount of altitude marketing in this industry and some of it is nonsense. Three corrections:

Altitude is not a compliance issue. We went through 6 CCR 1010-2, the Food Code, the FMAC statewide checklist, Denver's mobile unit guide and plan review packets from seven Colorado counties. Not one contains an altitude line item. No health inspector and no fire inspector in Colorado will check your elevation. It's a build-quality and warranty argument — a good one — but anyone selling it to you as a regulatory requirement is overstating it.

Safe cooking temperatures do not change. USDA guidance is explicit: use the same internal temperatures at altitude — 145°F for whole cuts, 165°F for poultry — and the same sea-level time and temperature guidelines for oven roasting, because oven temperatures aren't affected by altitude.

We're not going to quote you a derate percentage. There's a widely-repeated "4% per 1,000 feet" gas derating figure. It may well be correct — it appears in the fuel gas code and NFPA 54 — but those documents are paywalled and we haven't read the primary text, so we're not citing it as though we had. The manufacturer's 2,000-foot orifice threshold is better sourced and more actionable anyway.

Cooking at 5,280 feet — a throughput problem, not a safety one

Water boils at roughly 1°F lower per 500 feet of elevation. At 7,500 ft it boils around 198°F instead of 212°F. That doesn't make food less safe — the safe internal temperatures are unchanged — but it does slow down every moist-heat method you use.

USDA puts it at up to one-quarter more cooking time for meats and poultry cooked by moist heat at 5,000 feet. Braising, steaming, boiling and stewing all take meaningfully longer.

That's a real equipment-sizing consequence, and it's the one altitude effect that changes your layout rather than just your parts list. A birria or barbacoa program in Denver needs more burner BTU and more hot-holding capacity than the identical menu in San Antonio, or you'll fall behind during a rush. Tell us the menu and the city and we size for both.

The same logic applies to generators. Naturally aspirated engines lose output as air density drops, and manufacturers sell high-altitude jet kits for exactly this reason. We oversize the generator on Colorado builds as a spec decision. We're not publishing a percentage until we have a manufacturer's sheet in front of us — but the direction is not in doubt.

Do gas appliances need different orifices in Colorado?

Yes, everywhere in the state. Manufacturers configure commercial gas appliances for installation below 2,000 feet and state that installing higher without changing orifices voids the warranty. Denver is 5,280 ft and the lowest point in Colorado is still above the threshold. Because Colorado adopts the 2021 International Fuel Gas Code statewide, installing contrary to manufacturer instructions is a code issue, not just a warranty one.

Does Colorado require freeze protection on a food trailer?

No. There is no freeze-protection requirement in the Colorado retail food rule, the FDA Food Code, IFC 319, the statewide fire checklist, or any county plan review packet we have read. It is purely practical — but a trailer with uninsulated, unheated water lines will not survive a Colorado winter.

What is the most common Colorado fire inspection failure for an out-of-state trailer?

A missing listed LP-gas alarm. IFC 319.8.5 requires one installed inside the vehicle near the LP-gas system components, and it appears on the statewide Fire Marshals Association of Colorado checklist. It is inexpensive and it is pass/fail.
