Why we're this specific about money

In December 2023 the Bexar County Sheriff's Office announced an investigation into a San Antonio food trailer operation. The victim count started at 28 and roughly $186,000. By the time the federal case was filed it was around 100 people and roughly $1 million. One of the defendants pleaded guilty to conspiracy to commit wire fraud in March 2026.

The method was simple: take a deposit for a custom build, let the buyer choose their features, then ask for more money to "finish", and repeat until the buyer runs out. LULAC pushed federal investigators to take it because of the scale and because the operation specifically targeted immigrants. The sheriff's summary was blunt: "I don't know if these people ever actually built a single trailer."

One woman put $10,000 from her late husband's life insurance into a deposit. She found the company on Facebook and trusted the reviews there.

The payment milestones

You pay in four stages. At every stage there is something physical you can see, photograph, or drive out and touch.

1. At signingThe smallest of the four. Buys your slot in the schedule, the engineering time on your floor plan, and the first material order. You receive the signed agreement, the spec sheet, the warranty and the pass-inspection guarantee before you pay it.
2. At frame completeThe chassis is welded, the subfloor is down and the walls are up. You get dated photos with your build number visible, and you're welcome to come and stand in it.
3. At equipment setHood, sinks, tanks, cooking equipment installed. Water pressurised and tested at every fixture. Propane pressure-tested. Photos again, plus the suppression system's service tag.
4. At deliveryFinal balance when the trailer is in front of you, systems demonstrated, and you've signed off on the walkthrough. Not before.

How you verify us

Come to the shop, unannounced

Dallas, TX. Turn up on a working day and ask to see the floor. If a builder can't or won't let you walk their shop, that answers your question.

Ask for a customer in your city

Not a testimonial on a website — a phone number for someone in your town who bought from us and passed inspection. We'll give you one. Call them without us on the line.

Check the paperwork before you pay

Written agreement with your spec attached, warranty terms, pass-inspection clause, and a milestone schedule. In Spanish if you prefer. Read it, or have someone read it for you, before any money moves.

Watch your own build

Dated photos at every milestone with your build number in frame. Ask for a photo of a specific detail and we'll send it that day. Generic stock photos of "your" trailer are a classic tell — Moby1 in Utah showed customers photos of other people's trailers.

The 42-point pre-delivery check

Before any trailer leaves, we run the same list an inspector runs. It's built from the DSHS pre-licensing checklist, the FDA Food Code plumbing and physical-facility requirements, and the fire-code items city fire marshals actually write up. Anything that wouldn't pass gets fixed here, on our clock, before you're standing in front of an inspector with a lease and a payment.

You get a signed copy of the completed checklist with your trailer. Bring it to your inspection.

The warranty and the guarantee — two different things

Workmanship warranty — 6 months cash, full term if financedCovers our work: welds, plumbing joints, electrical terminations, gas fittings, the things we assembled. Doesn't cover equipment you supplied, damage, or normal wear. If it's our weld, it's our problem.
Pass-inspection guaranteeSeparate, and more important. If your trailer fails a health or fire inspection on something we built — sink sizing, tank ratio, hood coverage, propane mounting, screening, surfaces, wiring — we fix it at our cost and get you re-inspected. It's a clause in your contract, not a phrase on a website.
What the guarantee doesn't coverThings outside the build: a missing food manager certificate, no servicing log, no commissary agreement where one is required, an expired suppression tag two years later, equipment you added afterwards. We'll help you fix those anyway — but we won't pretend they're covered.
