The best margins in mobile food

Coffee trailers built for the power draw, the water, and the morning rush.

Coffee is the margin outlier in this business — food cost around 25–35% against 30–40% for hot food, and much lighter labour. The build is easier too. What it isn't is simple: espresso equipment is unforgiving about power and water quality.

What goes into a coffee trailer

EquipmentWhy we spec it this way
Espresso machine with real power behind itA two-group machine draws serious current. This is the number one thing that goes wrong in coffee trailers built by people who don't build coffee trailers.
Water filtration and softeningScale destroys espresso equipment and ruins the shot. Filtration isn't optional, it's part of the machine.
Grinders, one per beanEspresso, decaf, and a batch grinder if you're doing filter. They need their own counter and their own circuit.
Refrigeration for dairyUnder-counter, right at the steam wand. Dairy runs are where a barista loses the queue.
Ice, blender stationFrappés and cold brew are usually half your ticket count in a Texas summer.
Drive-up or walk-up windowHeight set to the actual use case. A drive-up window at walk-up height is a daily annoyance you can't fix later.

What we've learned building these

Power is the whole game. A two-group espresso machine plus grinders plus refrigeration plus a blender will trip an undersized system every morning at 7:45. We size the electrical to the equipment list and spec a shore-power inlet that can actually carry it — and if you're running on a generator, we size that too.

Water quality is equipment maintenance. Texas water will scale a boiler fast. Filtration and softening at the inlet, not an inline filter as an afterthought.

Workflow is inches. Portafilter to grinder to tamp to group head. If any of those steps needs a step, you lose a drink every rush. We lay coffee trailers out around the barista's actual movement.

You still need the sinks. A drinks trailer with any open food or reusable utensils still needs the three-compartment sink and a separate handwash sink. Prepackaged-only is a different licence tier — worth understanding before you design your menu.

Coffee trailers — questions

Is a coffee trailer cheaper to build than a food trailer?

Usually, yes — less cooking equipment, often no Type I hood or suppression if you're not producing grease-laden vapour, and a shorter trailer. The espresso equipment and electrical eat into that saving.

What licence tier is a coffee trailer in Texas?

Often Type II rather than Type III, depending on what you handle — which means a lower application fee. If you're selling only prepackaged items it can be Type I. The tiers explained here.

Can I run it off a generator?

Yes, but size it properly. A two-group machine plus grinders plus a blender is more load than people expect, and a generator that's marginal at 7am will be a daily problem. We'll spec it against your actual equipment list.
