The Fort Worth market, honestly
Fort Worth is BBQ country and it takes it seriously. It's also less saturated than Dallas and has a stronger local-first culture — a Fort Worth operator who becomes a neighbourhood fixture has something durable. The Stockyards and the growing near-southside food scene both support trailers well.

Permits and inspections in Fort Worth — what changed in 2026
Health permitting is now statewide through DSHS. Tarrant County Public Health historically ran the mobile food unit programme, and its published packet is dated July 2023 — useful as a build reference, obsolete as permitting guidance.
We could not find an updated Fort Worth or Tarrant County page reflecting the HB 2844 transition at the time of writing. If you're operating here, call before you rely on anything published locally.
Fort Worth Fire Department still inspects. BBQ rigs in particular get scrutiny on solid-fuel cooking, extinguisher class and clearances.
Tarrant's old build standards are still a sensible design floor even where they no longer bind: 100°F at the handwash sink, 110°F at the three-compartment sink.

How long from order to operating in Fort Worth?
8 weeks to build, then your DSHS application and pre-licensing inspection — state law requires DSHS to conduct the health inspection no later than the 14th day after a complete application — plus your local fire inspection.
