The San Antonio market, honestly
San Antonio is a puro food trailer town — the trade is genuinely woven into how the city eats, from raspa stands outside schools to full taquería trailers on the South Side. It's also where the industry's worst scandal happened, which is why San Antonio buyers ask harder questions than buyers anywhere else. Good. They should.
Where San Antonio operators actually park

Permits and inspections in San Antonio — what changed in 2026
This is the city where Tu Trailita happened. A San Antonio operation took deposits for custom builds — most of the buyers immigrants — and then demanded more money to 'finish'. The Bexar County Sheriff's Office opened the case in December 2023 with around 28 victims and about $186,000; local reporting later put the total at roughly $1 million across about 100 buyers, and a federal guilty plea was reported in March 2026. The sheriff's assessment at the time: "I don't know if these people ever actually built a single trailer."
If you are buying a trailer in San Antonio, walk into the shop before you pay anyone anything. Ask to see a build in progress with a customer's name on it. Ask for a phone number for a customer in your part of town and call them without the builder listening. We will give you all three.
Health permitting moved to DSHS statewide on July 1, 2026 — San Antonio Metro Health no longer issues the mobile food permit. Metro Health's published mobile vending guidance still predates the change, so read it for build specs, not for permitting.
The San Antonio Fire Department still inspects if you use propane, a generator, or a gas, charcoal or wood grill. Local location rules also survive: 50 feet from intersections when vending from a public street, notarised written owner permission plus accessible flush toilets on commercial property, and restrictions near schools around the school day. Downtown and Parks locations need their own permits.

Do I need a San Antonio permit for a food trailer?
Not a city health permit — not since July 1, 2026. You need the statewide Texas DSHS Mobile Food Vendor licence. You still need local fire inspection through the San Antonio Fire Department, and you still have to comply with San Antonio's zoning, parking and right-of-way rules.

How long from order to operating in San Antonio?
8 weeks to build, then your DSHS application and pre-licensing inspection — state law requires DSHS to conduct the health inspection no later than the 14th day after a complete application — plus your local fire inspection. Most people are operating within a few weeks of delivery if they start the paperwork while we're building. We'll tell you when to start it.
